Co-owner of Brookfields Restaurants Stacy Marr said after being around for over 40 years, part of their success is having a consistent menu. “I swear if we took off chicken fried steak and eggs, our customers would revolt,” Marr said. “So, we can add things, but God forbid we ever take anything off.” Marr said that over that time there certainly has been a change at the family-run restaurant, just not to the menu, particularly payment options for customers. “Oh, my gosh, we were 85% cash in the 80s,” Marr said. “Now we are 85% to 87% credit card.” She said more change is happening; they’re now adding another payment ...
